Pumpkin cake anyone?

A couple of days ago I delivered a meal to our friends, The Blaggs, because they just had a beautiful baby girl.
I wanted to take them something that had some type of fall flavor. I was reading this blog and found this amazing pumpkin cake recipe. I have to say I was a little nervous about making it, but it turned out really good. I was nervous because it is all from scratch and I don't always do so well with the "from scratch" types of things. I usually go the cake mix route.

So here is the recipe for Pumpkin cake(or bread...or cupcakes...or whatever mood you're in!)
2 cups sugar
2 cups flour
1 cup vegetable oil
4 eggs
1 15 oz. can pumpkin (NOT pumpkin pie filling!)
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon

Cream cheese icing (you can make it or buy it- I bough it)

Heat oven to 350 degrees.

Beat together eggs, oil, pumpkin, and sugar.

Stir in other ingredients until well mixed. (I use the mixer for this part too.)

Pour into a very, very well sprayed (like, the cooking spray should almost be pooling in the bottom of the dish) 9x13 pan.

Bake for 30 minutes or until center springs back. (Might take 5 minutes longer depending on your oven)

After the pan cools, frost the cake with cream cheese icing. But feel free to treat it like brownies, or bread, or whatever your heart desires.

It turned out really well, and very moist! The cream cheese icing is perfect for on the top.
I just though I would share it with you, because it was not hard and it is very delicious!

On another note, I'm very excited for this weekend. I'm heading to OKC to see my friend Liz and to go to a U2/Black eyed pea concert! It should be a super, fun girls weekend!

YUM! I can't wait to make this, thanks for sharing! I love pumpkin stuff--I had a pumpkin spice latte for breakfast and I just finished two pumpkin muffins for lunch! I think I have an addiction.

Please give Lyla a big squeeze for me next time you see her! I'm dying to see that sweet girl

Dude, you should definitely make a punkin cake and bring it with you! Then I won't make you sleep on the floor for sure! ;)
